Blueberry Sauce for Pancakes or Waffles

Ingredients
2 cups fresh blueberries, rinsed and drained or 2 cups frozen blueberries
¼ cup water
2-4 T sugar, to taste
1 T corn starch
2 T water
Makes four servings
  • Place blueberries in a saucepan. Add water and sugar, then simmer over medium heat for 5-7 minutes. Fruit will breakdown and release juices.
  • In a small bowl, mix corn starch and 2 T water. Stir into blueberries. Bring to a boil, stirring constantly, until mixture thickens.
  • Remove from heat. Let cool slightly and serve warm over pancakes or waffles instead of syrup.
