Chinese Fried Rice

Shopping List:
Cooking spray
Onion
Rice
Eggs
Soy sauce
Vegetables
Ingredients:
Cooking spray
½ c. onion, chopped
2 c. leftover cooked brown rice, cooled in fridge
2 eggs, beaten
2 Tbsp. Soy sauce
2 c. chopped vegetables or frozen peas and diced carrots
Spray a skillet with cooking spray and heat over med-high heat.
 
Cook onions until lightly browned. Add the rice and sauté (the rice must be cold before you begin, cool it in the refrigerator).
 
Beat together the egg, soy sauce and salt. Push the rice aside and add the egg mixture to the skillet.
 
Cook, scrambling the eggs until almost done.
 
Mix both the rice and egg mixtures together. Add vegetables and cook until done.

Fast Fact:

Serve fried rice as a main dish or with stir-fried chicken, beef or pork on the side
 
If your family has not developed a taste for brown rice, start by mixing ½ white and ½ brown and changing the proportions gradually. Cooked rice freezes well, so make extra when you have time. Avoid instant rice as it has minimal fiber and nutrients.
