Cowboy Caviar

Ingredients

1 can pinto beans (rinsed and drained)
1 can black-eyed peas (rinsed and drained)
1 can shoepeg corn (rinsed and drained)
1 green pepper, diced
1 red pepper, diced
1 yellow pepper, diced
2 large avocados, diced
1 large purple onion, diced
1 bunch cilantro, finely chopped
¼ cup olive or canola oil
¼ cup sugar
¼ cup apple cider vinegar
Tortilla chips, 1 serving per person (see Nutrition Facts for serving size)

  • Place all ingredients in a bowl and stir to combine.
  • Refrigerate overnight.
  • Before serving, drain off excess liquid (or can rinse in strainer, if desired).
  • Serve with tortilla chips (limit to 1 serving on the chips, but unlimited caviar).
