Place eggs in a saucepan and fill pan with enough water to cover 1 inch above the eggs.

Heat over high heat until water boils; turn off heat, cover pan and let sit for 20 minutes.

When done, set pan in sink and run cold water over the eggs until they are cool enough to touch.

Gently tap the cooked eggs to crack the shells; peel shell from egg.

Eggs have high quality protein. Hard cooked eggs can be made ahead and used for a quick breakfast, a change of pace in the lunch bag or to top a salad or make an egg salad sandwich.
