Oatmeal Raisin Muffins
Breakfast truly is one of the most important meals of the day.
Oatmeal raisin muffins are a delicious way to make sure your kids get started on the right foot.
Non-stick cooking spray
1 ½ cups all-purpose flour
1 Tablespoon baking powder
1 teaspoon salt
1/3 cup sugar1/2 teaspoon cinnamon
1 cup uncooked rolled oats
1/2 cup raisins
1 cup skim milk
1/3 cup applesauce
Preheat oven to 400 degrees. Lightly spray muffin tin with non-stick cooking spray (or use paper liners).
In a large bowl, mix together flour, baking powder, salt, sugar and cinnamon. Stir in the rolled oats and raisins. In a separate bowl, beat together the milk and egg. Add applesauce to milk mixture. Pour milk mixture into flour mixture, and stir only until dry ingredients are wet. Batter will be lumpy. Fill muffin cups 2/3 full of batter.
Bake for 20-25 minutes.
Makes 12 muffins. Serving size 1 muffin.
