Chicken breast halves or thighs
Bread crumbs
Dried basil, oregano or Italian seasoning
Pepper

Ingredients
4 small chicken breast halves or 8 small thighs
1/3 c. fine dry bread crumbs
½ tsp. dried basil, oregano or Italian seasoning, crushed
1/8 tsp. pepper
1 Tbsp. margarine, melted
Remove skin from the chicken. Rinse chicken; pat dry.

In a small mixing bowl, stir together the bread crumbs, herbs and pepper. Add the melted margarine and toss to coat. Sprinkle the skinned side of each chicken piece with the crumb mixture, pressing onto the chicken to coat.

Arrange chicken pieces, coating side up in a 12 x 7 ½ x 2 in. baking dish. Bake in a 400 oven for 25-30 minutes or until the chicken is tender and no longer pink. Do not turn.

Fast Fact:

To complete the meal, try baked potatoes (scrubbed and placed in the oven 30 minutes before the chicken), and fresh or frozen veggies. Then take advantage of the hot oven and mix up a batch of brownie mix and bake (to help manage portion size, freeze ½ of the brownies for another meal).
