Whole wheat bread
Olive oil

Ingredients
1 slice whole wheat bread
1 Tbsp. olive oil
2-3 mushrooms, sliced
1 tomato, halved
1 small egg

Using a cookie cutter, cut a hole in the center of the bread, large enough to hold the egg.

Heat the oil in a nonstick skillet and cook the mushrooms and tomato cut-sides down for 3-4 minutes until the mushrooms are beginning to brown. Turn the tomatoes over.

Make a space in the middle of the skillet and add the bread. Crack the egg open and carefully pour it into the hole in the bread. Reduce the heat and cook slowly until cooked through.

Season everything to taste with pepper and serve with the mushrooms and tomato alongside.
