Shredded Parmesan cheese
12 oz. Silken Tofu, extra firm
3 c. spaghetti sauce
4 c. spaghetti noodles, cooked
1/4 c. shredded Parmesan cheese
Prepare noodles according to package directions.
Heat spaghetti sauce. Grate tofu on the large side of a grater or crumble.
Assemble by placing in a bowl: 1 c. hot spaghetti, then 3 oz. grated tofu, 3/4 c. spaghetti sauce and 1 Tbsp. Parmesan cheese.
Tofu is versatile, inexpensive and a good alternative protein source for meat-eaters or vegetarians.
